MDC to offer deer processing class in Kirksville Nov. 1

KIRKSVILLE, Mo. — Once hunters harvest deer, they need to know how to skin them, process the meat and store it for future meals. The Missouri Department of Conservation (MDC) will offer a free field-to-freezer deer processing class in Kirksville on Nov. 1 from 6 – 9 p.m.

This program will teach hunters what to do with the deer after the harvest.  Participants will learn all the steps necessary to skin and butcher deer meat themselves.  The class will demonstrate how to process a deer in simple steps with minimal equipment.

In the class, MDC staff will demonstrate how to process venison into steaks, roasts, and ground meat. The class will also cover safe knife handling, and other tools needed to correctly prepare venison for the freezer, as well as proper packaging techniques. MDC will provide all necessary equipment.

This free class will take place at the MDC Northeast Regional Office, 3500 South Baltimore Road. Participants must be at least 14 years old; ages 14-17 must be accompanied by an adult.
